Making: Jo’s Ultimate Banana Bread
Jo’s Ultimate Banana Bread
Ingredients
1 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
2 teaspoons cinnamon ground
4 ripe bananas
1 whole egg
1 egg’s white
1/2 cup white sugar
1 teaspoon vanilla essence
6 tablespoons butter melted
10 toasted and chopped almonds or walnuts
Rolled oats (optional)
Directions
Preheat the oven to 180C/350F. Line an 8”x5” loaf pan with baking paper or grease before dusting with flour.
Sift flour, salt, baking powder, baking soda and cinnamon into mixing bowl.
In another bowl, mash bananas with a fork.
In a bowl, beat the eggs, sugar, vanilla, melted butter, and mashed banana for 2 minutes using a hand mixer on medium speed, or whisk for three minutes.
Add the dry ingredients and mix well until there are no dry lumps.
Add the nuts and fold into the batter using a spatula or a wooden spoon.
Pour the batter into the prepared baking loaf pan.
Sprinkle rolled oats over the top for added texture.
Bake for 45 minutes to one hour, the baking time depends on your oven. The banana bread is fully baked when a toothpick or a wooden skewer inserted in the middle comes out clean.
Place the loaf bread over a cooling rack to cool completely before slicing or storing.
